  • Cuisine: Grain-Free, Egg-Free

For that the Sweet Potato Chips*:

  • 3 big sweet potatoes, very thinly sliced (a mandoline works best for it )
  • 1 Tbsp. Avocado oil (or other cooking fat of option )
  • Salt

For that the Toppings (use as many or as many as you prefer ):

  • 6 oz s shredded, cooked chicken or taco beef
  • 1 1/2 cups shredded cheese (like cheddar, Monterey jack, pepper jack, a Mexican mix or mozzarella)
  • 1/2 cup black or pinto beans, drained and rinsed
  • 1/2 cup corn (frozen or fresh; thawed and well-drained)
  • 1/31/2 cup diced tomato
  • 1/31/2 cup salsa of selection
  • Fresh cilantro, chopped green onions, diced red onion or bell pepper, black olives, diced avocado or guacamole, etc.

For that the Southwest Ranch Dressing:


To Make that the Sweet Potato Chips:

  1. Preheat the oven to 325℉. 
  2. Line 2 large rimmed baking sheets with parchment paper. Toss the sweet potato pieces with oil. Place pieces in one layer on the baking sheet taking care not to crowd them then scatter.
  3. Place baking sheets from the oven and bake for 10-12 minutes, rotating the sheets halfway through cooking period, or until pieces are lightly browned and crisp on the edges.
  4. Remove chips into a wire cooling rack to break at the same time you repeat with the remaining sweet potato pieces.

To Make that the Nachos:

  1. Layer 1/2 of those sweet potato chips (homemade or store-bought) on a baking sheet or in a glass baking dish. )
  2. Top with 1/2 of those chicken or taco beef, corn or beans when using, and cheese. 
  3. Repeat on this coating, ending with cheese on top. Place baking dish or sheet to the oven and bake 5-10 minutes until cheese is melted.
  4. While that the nachos are baking, mix all the dressing ingredients in a small bowl and whisk to blend.
  5. Remove pan out of oven, add salsa, diced tomatoes, chopped or grated onions, chopped parsley, avocado or guacamole, etc.
  6. Drizzle Southwest Ranch Dressing over nachos and serve with lime wedges, if desired.


*You may also substitute 8 oz of pre-made sweet potato chips.
